In the winery, we are traditionalists. We only vinify the grapes of our production and age our wines and the Barbaresco traditionally, in large 25 / 30 hectoliter French oak barrels. We do not like to use barriques.
I did some trials to make a Barbaresco passing it through small wooden ones, but then I did not like it. The barriques are only used “to service”, for decanting. In 2009 I renovated the wine cellar: I enlarged the spaces and today I can vinify all my grapes.
I produce 45 thousand bottles a year. 60% of production goes abroad.
